At a recent family barbeque my husband's family served 'virgin' pina coladas and they were yummmmmmmyyyyy. They have tons of calories and sugar but for one day it's not gonna kill anyone. :) You will need pineapple juice, pina colada mixer from the grocery store (it's basically cream of coconut, and non-alcoholic--you can substitute cream of coconut in cans if you're opposed to buying the mixer because of the association with alcohol), ice, and a blender. Try putting equal parts of each in the blender and using 'blend' speed for about 10-15 seconds and you have a yummy, cold drink.
I also like making sparkling fruit punch with different mixtures of juice and soda. Try this recipe:
1 qt. ginger ale
1 qt. club soda
1 qt. orange juice
1 qt. Hi-C fruit punch
1 c. lemon juice
Slices of fruit as a floating garnish---orange, lemon, and pineapple slices, maybe some maraschino cherries
ice
Pour all the liquids in a punch bowl (I find it stays more sparkly if I pour the sodas before the juices), then gently add the fruit garnishes. Yum!
