Re: Chikar Cholay
CHIKKAR is punjabi word for keechar (mud)
We make it in a different way !
boil the soaked chanay separately and add them to the masala and cook until really tender. then using a potato masher, crush the chanay in 3-4 places (sub chanoan ka qeema nai kootna - in my mom’s language) so some of the chanay will be mashed and thicken the gravy
I LOVE them with imli ki chutney yumm
the masala is made as follows:
blend an onion,2 tomatoes, 1tbsp tomato paste, a maggi/knorr chicken cube, 4 tbsp yogurt, salt, green chillies,1/2 tsp red chilli powder, haldi, cumin powder and zeera powder. bhoon this masala in oil with 1-2 cinnamon sticks nicely adding some water if needed. then add boiled chanay alongwith its water and cook on dum for 25-30 minutes and then do the mash-thingy
Re: Chikar Cholay
The trick to getting the texture right is to soak the chickpeas in baking soda overnight & then cook them with the same water they were soaked in.
Re: Chikar Cholay
Maggi/Knor are the things of the current era! The dish appears to be a traditional one! What are the original ingredients?
Are your saying that ladies who posted recipe before your post, posted bad recipes?
