I do a basic cake recipe of 1 cup each butter, caster sugar, eggs (break eggs into cup) and 1 and quarter cup of self-raising flour. Teaspoon of vanilla essence / flavouring.
You can either mix everything together and beat for a minute, or cream butter n sugar togther, incorporate egg slowly, fold in flour with a spoon or more of warm water to a soft batter, then bake.
You can add cocoa powder, orange rind, grated lemon rind, coconut - use more liquid with coconut, nuts, dried fruit (coat with flour first).
