it is probably the size of the pan. I realized that in a long rectangular pan, the cake did not crack, also the cake was fine when i divided the mixture into two round pan. It did crack when the mixture was in a small square pan.

hmmm .. lusi , but I tried changing pans to a bigger one .. which had loads of space in it , even after the cake rose there was still good enough space in it …

Sometimes the cake cracks , other times it doesnt … thats the mystery :no:

do you bake in a dark pan? ... dark pans heat faster and cake cooks too fast ...
also over beating ... beat just enough up mix

hmmm yes the pans are dark colored but not thick .. recently I made cake in a quality street dabba ... thats just light tin ...

May be i am mixing it a bit too much .. will try to reduce the mixing too ..

I think you are beating it too much.
This used to happen to me but never since I started using a fork to mix the batter.

And now that I’ve said this watch my cakes crack this weekend when I have four to do… :cb:

Beating (or too much beating) does that. I just use the beater for beating eggs, rest I mix with a spoon. Never get cracks. This I'm talking about the start from scratch cakes.

For the cake mix, just beat the eggs, 'fold' the rest of the mixture with the eggs. Keep a light hand.

Hadeel , you are right , I think I might be doing the process wrong , I will mix the eggs with the beater next time and use a fork to do the batter flour ... lets see how it turns out this time ..

Put another tin of just water in the oven at the bottom. I read somewhere that the water will create some steam and that can stop the cake from over-drying and cracking. I have always used this in my baking, and never had a problem. Good luck
