NN - thats a good idea to serve roast beef or chicken.
KA - Mall suggested a great idea! but seeing as you want to have it with roast beef, mash would be the best option. I make my mash by cutting the potatoes into small pieces into a pan, add some milk and on low heat mash it. Add some butter to it and keep mashing until it is creamy and smooth. You can also add abit of salt and pepper and add chopped chives (optional)
YUM!! And as X2 said - bake them next time and you can still have that with you roast beef.
