Other ways to cook mehti: Methi pakak qeema, methi aur haray moong ki daal ka saag, dired methi leaves in karahi ghost, dired methi leaves in cooking kaleeji (liver), methi dana in panjpoori for cooking tori, etc.
femme plssss can i have ur mum’s recipe? mine looks different, i wonder how different the recipes must be. anyway it would be good to have a new recipe for aloo methi.
I made it using onions only and a couple of tbsp of yogurt. In the end iadded some lemon juice but you couldnt even taste it. It was sooo yum. I think the next methi dish is going to be methi parathay. Double yum.
Namkeen mum just added some water and oil to the chopped up potatoes and let them cook in a covered pan. When they were pretty much done and the water reduced to a somewhat thick soupy consistency she added the masalas, salt, flaked red chilly, kalonji, corasely crushed sookha dhaniya cooked it a bit in and then added the chopped methi, She doesn;t cook the methi a whole lot, Even if you just cover the put after that the methi softens down or you can just leave it covered on simmer for a few mins. Sprinkle a bit of lemon juice before serving.
I tried making aloo methi a few years ago (pre-married life) when my mum was away on a holiday. I found a recipe on the net which I followed. At one point it said add one cup of methi... which I did. The end result was horrible and was totally not edible. Turned out it was supposed to use fresh methi! I used a whole cup of dried methi :(
^^awww, i can imagine how bad your aloo methi turned out...dried methi is a completely different thing...it's only used for sprinkling on salans and stuff, kinda similar to dried oregano and basil.
i chopped up the aloo into small cubes and fried 'em with salt and black pepper. took em out, and in the same oil i added chopped onions and garlic. when onions were browned i added lal mirch, dhaniya powder, and then added the methi leaves chopped coarsely as well as the fried potatoes. as u said, the methi cooks quickly. finally i added a dash of lemon juice for garnish.
