With digital images you can make changes to the images that you wish or something you like. For example taking the sun pics at dawn time and changing the colors of the clouds to little extra red to give more beauty to the picture.
In portraits people want their faces to be free of artifacts and any kind of marks, it doesn't mean that they want to hide something, it is just personal satisfaction.
In the commercial world, most of the product and natural scenic pictures go through the editing process.
With digital cameras, when you shoot in raw, you not only taking the picture but you also gathering lots of the image related data. Once you download pics in your computer you can then modify and change the ratios of different colors if you wish.
In JPG images when you change one color for example, when you reduce black it will be reduces from all the basic colors compare to the raw. JPG files have less flexibility to change the colors than in raw.
