      Because they become obliged to give due to the culture. They feel they aren't good parents if they don't give their daughter so n so. They even take loans to give jahaiz.

      You don't become obligued to do that, unless you allow it to happen. Everything is within your control.

      Plenty of people that I know who didn't give their daughters jahaiz. No severe consequences.
      The worse that will happen is that the rishta will end. Fine, who wants to marry their daughter to greedy people.

      I am aware in some cases it is easy to speak and things can become ugly, things aren't always that black and white. But in general, it is all up to you how you react to something. Things aren't always as difficult as we make them.

      This issue is not as simple as it seems on the surface. If you are lower middle class (or even middle class), jahaiz is a burden for the girls family. But for those who are rich, jahaiz ensures the girl gets her fair share of her family wealth.
